The key phrase in the rules is "as heard by the operator". Just feed a
stereo sound card in parallel with your stereo headphones. If your setup is
such that you do not hear your transmitted audio, there is no need to
record it because that would not be "as heard by the operator"; if you do
hear it, it will be in your headphone audio and will be recorded.

Note that while the rules call for entrants competing for a top three
position to make a recording, that does not mean that the contest managers
will ask for recordings from the top three finishers, just that they may
choose to do so if they think it would help them resolve questions they
might have about a log.

Not in response to your question, but as a comment on this entire
discussion about recording: maybe the folks who are unhappy should read
section XIII of the rules.
