I've always used 2 keyboards for SO2R.

Touch typing is your friend. One hand on each, sure. But two is faster.

Get used to moving a lot, but figure out where you are able to minimize
movement and do that.

There are no shortcuts or tricks. It's hard and exhausting. :)
