with built-in switching supplies and units designed to be powered from

filament transformer in the back of a cabinet and wire the lights from
it?
Certainly. Even a quiet 12V switcher, like some sold for use with our
ham gear. We must, of course, pay attention to local building codes with
respect to installation methods and safety approvals of equipment.
