Speaking of Mac/Linux: Can a Pegasus / Jupiter run from a mac? If not directly, then perhaps by using Virtual PC? Just curious.

Quite so.  Of course, Mac OS 10.x is FreeBSD (a free UNIX derivative)
with an absolutely beatifully done Apple GUI on top of it.  Kind of the
best of both worlds.
