I've always wondered how the average guy can tell the difference between
2500 and 5000 PSI concrete when it's delivered. It's my understanding that a
test cylinder has to be poured and sent to a lab to determine the PSI
strength. Couldn't a concrete company tell you its 5000 PSI and deliver
something much less than that?

You've already gotten a bunch of good answers but this is a little
different take on things. If you haven't poured yet, you can order a
stronger
concrete mix (e.g. 5000 psi instead of 2500 psi) and it'll get you to 2500
in about 4 days saving you several weeks. The cost difference is not
significant.
