I used exactly the same approach. To clamp the stainless to the tower, I used stainless U-bolts. They hold the copper ground wire in place, thereby isolating the copper from the galvanized tower leg.

You can cut 24ga SS with snips and you could also use thinner material which is really easy to cut. You really don't need that many clamps and buying a small piece of stainless steel is expensive, so
