My personal opinions:
The 813 is a nice tube and I have built amps using them.
However the 3-500Z is a current tube, in production, and not outlandishly
priced.
As far as as a matched pair, I've never worried about that with 3-500s
unless they are way off and I've not found any that were. The 3-500s are
not a higain tube, but if you have an honest 100 watts and enough plate
voltage they'll run the legal limit.
