You could wind them "morefiliar" as a bunch. So you have a bunch with
two tails: Beginning and ending. For non flipping, take the wires from
"beginning" tail as beginnings, the wires from "ending" tail as endings.
For 180 Degrees, take the wires from "beginning" tail as endings and the
wires from the "ending" tail as beginnings.

You could also mark your wires before winding them. It depends on your
space and skills, wether you use paint or even signs with letters or
numbers.
Be careful in winding, choosing the wrong direction in winding may also
flip your phase.
