[AMPS] Question about "Carbonization" during arcing

I have seen the black residue and it looks like carbon. But, how do we get 
carbon
on the capacitor plates when they are made of copper or aluminum or other 
materials
that don't contain carbon?  Could it be that the arc disassociates carbon 
from carbon dioxide in the air.
But, that does  not explain what I see sometimes in side vacuum systems 
after serious arcing.

Any ideas?
