Non-magnetic stainless steel alloys will work. Some are magnetic, as 
can be tested with a small magnet. These are the higher loss 
stainless steels, in which eddy current heating can be expected. 
Brass is certainly preferred, but for strength, it is not so good 
compared to SS. We try and use brass in big amp cabinets here, but 
sometimes are forced to use nonmag stainless bolts. They do work. By 
the way, nickle plated brass hardware is very common for usage also.

Building side panels and chassis of stainless steel sheet is a way to 
lower the Q of your amplifier, unfortunately.
