REPLY:

Since the highest frequency band you are running it on is 30 meters, it probably
does not matter, but if you ever add higher frequencies, it might. Roller
inductors always have more stray capacitance to ground from one end than the
other. The end with the least stray C should go to the tune cap side. 

Incidentally, a low frequency C-meter will not be able to tell the difference.
You will have to determine by visual inspection. It should be obvious.

Congrats on having an amp that you are still using after 50 years. Wow!
