[Amps] HV transformer and Variac

Thanks to info from Manfred and a former coworker, I rewound a transformer. It wasn't at all difficult, cost was a little over $100 for materials, and I have a multitap transformer that can do easily over 4KVA.  If I didn't already have a NICE donor for a heavy iron transformer, I would've looked at going with a switcher.

Yes.

Or buy the materials and wind it yourself. It will be some work, but the cost 
will be at most half that much, and you will learn something, and get the 
satisfaction of having done it yourself.

Or make a switching power supply. It will be far more complex, you will have to 
learn a lot of things, but the end result will be small, lightweight, and the 
output will be precisely regulated, hum-free and short-circuit-proof.
