[CQ-Contest] contest taping

what should i look for to record 12 or more audio channels, preferably 
digitally
for a contest?  anyone know what is available off the shelf to do real time
compression and storage?  how much could that be compressed down to?  assuming
communications quality voice at best, not broadcast or cd quality of course.
