[CQ-Contest] Category hopping

AFAIK none. Because typically you enter the competition by signing up. When
I was racing triathlons I would be automatically in
a category based on age group, no hopping there, but everybody was already
registered _before_ the race started.
The difference here is that radio contesting allows for anybody to just show
up and decide after the fact to even submit a log or
not. 3830 is not an official site with regards to the contest in question,
so IMHO the only submission that matters is the one
made to the official entry point for this contest. The rest .. that's called
competitive tactics and happen in any other sport.
Distract your opponents, make them weak, make them make mistakes by playing
mind games. That's part of competition.

What "sport" is even remotely similar to radio contesting with very
different playing fields and multiple categories?

Is there any other sport where a competitor can start in one category, then
in the middle of the race...or even after the race...change their entry
category.
I can't think of one, which seems to indicate such action is
unsportsman-like at best.
