 I think you're spot on with that comment, to me the 5NN in a CW contest serves the same function as the seven-byte preamble in an Ethernet frame. I'm lost without a 5NN and it took me a while to get used to the "ENN" some "NASCAR ops" send at 45wpm to save a microsecond or two.
I actually gave up on the Stew Perry because the lack of 5NN made it frustrating to copy the grid

 RST still has value as a “notifier” in that what follows is what really matters, the exchange. With CW, your brain gets into the rhythm of 5NN, and makes it easier to decide what follows. It’s even better in RTTY, as if your decoder gets the 599 correct, chances are the exchange may be OK too.
