I think Brian's suggestion is a great one.

a single frame every 30 or 60 seconds would be much better.  More compact and with better impact.

I've also got a GoPro camera as well as an extended battery and display. I
have brought it a couple of times with a tripod and adapter with the intent
to record, but never got up there first and/or remembered to set it up.

Instead of shooting video, they can be set to capture a picture every
minute (and some selectable rates of more than a minute). The images can
then be stitched together into a video by a number of different pieces of
software.

Regardless of video or pictures it would be great to have at least two
angles.
