[RFI] CAT 3 Cable?

Twisted pair cable picks up far less differential mode RF than untwisted
cable, and the higher the twist ratio, the better the rejection. Go straight
to CAT5.  

You may still have problems with common mode stuff. Use ferrites to choke the
common mode stuff.
