Just put a fresh roll of paper in the Teletype before the start of the  test. 
 I've never run through an entire roll in a single contest.
 
Yes, it's easy to simply write the UTC on the roll with each contact.   It's 
easier when you have to send the time as a part of the exchange.   (Good 
typing skills come into play when you don't just send a fixed message that  you can 
store on paper tape).
 
I tried to see your setup per your link but the .jpg file appears to be  
de-linked.
