Got in on this one a bit late -- however ...

... the September 2000 issue of NUTS & VOLTS has a how-to using M$Paint to
create one-off schematics such as a cabling summary.   You make the symbol
in one instance (window) of Paint with a pixel space of 65X20, and copy it
to another normal-sized instance for storage.   Copy-and-paste to create
schematics.    Make up your own symbols as you go along.
