So in an Austenitic stainless steel, the only factor (other than frequency) affecting skin depth is the resistivity, and in that respect, stainless steel will be no different to any other non-magnetic material. Provided it's an Austenitic stainless, as opposed to one of the other varieties of stainless, such as the magnetic ones (some of which actually rust!).
