Don,
I think most remote cameras are labeled "security" because that is where
the market is.  Other than recording movement, I don't know what makes them
"security" cameras.  We have a a half dozen here on the farm keeping track
of the horses and other critters.  We have some very cute clips of baby
foxes playing in our hay barn last spring.

For your needs, you might look at solar powered wifi cameras.  No
wiring needed.
