Just some food for thought on secondary taps: If you shoot for 3 kVDC output
under load, you will be able to run nearly all the modern legal-limit
American-design tubes. On the other hand, many of the Russian tubes are happier
with somewhat less voltage, on the order of 2.5 kVDC or so. If you build a
single voltage supply at 3 kVDC, you can drop it down with a variac or a bucking
transformer and avoid having taps altogether.

In other words, having taps all over the place might give you a warm fuzzy
feeling, but they aren't really necessary in most cases.
