Virtually all audio transformers used by hams are unshielded -- shielded transformers are used in pro audio (Jensen, of Burbank, CA is the Cadillac brand), but they aren't cheap.

Adding to Jim's recommendation, I believe Cinemag is still producing high-end shielded audio transformers similar to the Jensen series. Also, with some luck, UTC audio transformers can be had for less than the Jensen types and are more than good enough for our purposes. There are many decades of these out there in old equipment and in parts bins.
