316 stainless is a good choice for corrosive environments.  Some 
sailboat makers use it for rigging and good boatyards may stock it and 
certainly will have swaging equipment and fittings if you can get the 
cables premade.  Otherwise, Nicropress fittings are a good choice and 
you can probably rent the tools.

7x19 strand core is preferred for running over sheaves.
