I've been meaning to ask about this for a while now. Suppose you want to add

house. If you are bonding your coax shields at the bottom of the tower, would
it be better to put the choke on the shack side of that bond, or on the tower

On the shack side. In general, coax on a tower should be bonded top and
bottom.
If the choke is on the shack side, wouldn't lightning "see" the high impedance of the
choke and be "forced" to ground at the bond?
Well, at least "suggested" to ground. :) But the inductance of the run
to the shack does that too.
There should, of course, be a choke at every antenna feedpoint.
