[AMPS] Simulating center tap

I just noticed that the filament transformer I was planning to use (got it free)
for my 2 x 3-500z amp does not have a center tap.  It has two 5v 20a windings
which I was going to put in parallel. 

I recall that sometime back there was a thread on the subject of how to simulate
a center tap on a filament transformer that doesn't have one.  Does anyone
remember the (haha) consensus of opinion on this?  

What would happen if I just connected the b- return to one side (don't shoot me,
I'm just asking)?
