Doesn't the 8875 use a transverse air flow? If so, how do you get
proper cooling with the 3CX-800 ?

Go with the GI-7bT variant if you can obtain them instead of the
regular GI-7b.
You also might consider a single GS-31b. That tube has a plate
dissipation of 1000-watts instead of 700-watts which a pair of GI-7b
