Answer: You don't. You can turn the offset calculation on or off, but you
can't adjust it.

N1MM+ knows which sideband your rig is on (USB or LSB), and it knows the
audio mark frequency the digital "engine"(e.g. MMTTY) is using. If the
offset option is turned on, N1MM+ adds (USB) or subtracts (LSB) the audio
mark frequency to/from the dial frequency to come up with the actual
transmitted mark frequency.

You turn the option on (for modes like USB/LSB where the dial displays the
suppressed carrier frequency) or off (for modes like FSK where the dial
displays the actual mark frequency) by using the Digital Interface window's
Setup menu. The option is called Turn AutoTRXUpdate On/Off.
