Here's how I do it:


Get a large bowl of water or large mirror and place it on the ground a good
distance from the tree.  Now, walk past the mirror or bowl in a line with the
tree and look into the reflecting surface, moving back and forth until you see
the top of the tree in the reflection.  Mark the spot where you are standing.
Measure the distance from the base of the tree to the center of the reflecting
surface and from the center of the reflecting surface to the mark you made on
the ground.  Next measure the height of your eyes above ground.
Now you all that you have to do is to figure the ratio of the 2 triangle bases
and multiply your eye height by this ratio and you will have the height of the
tree.
