You have a very good "scientific" (and humoristic) test about Ultra Ever Dry in 
Ars Technica :

The two first pages are more about applications, last one explain how it works.
Conclusion : hard to spray evenly, variable result, don't last forever, 
expensive...
One of the problem is that if water is staying (when you treat a basin for 
example), it will at last attack the product.
