Dimming is quite simple. You reduce the current. Two easy ways to do that -- either reduce the power supply voltage or use a simple pot rated for the current. You do all this on the low voltage DC side of the circuit. You could also do what Wes is doing -- as long a you've tracked down a linear power supply.
