Hi Mike,
  If you click on the link at the top of this page, you'll see Eimac's numbers up to 5 KV on the plate.

  Above that point, rather than inserting a zener in the cathode line, I'd suggest biasing the control grid (suitably bypassed naturally) a bit negative to control the ZSAC and keep the resting plate dissipation within reason.  The screen may remain at ground.
