[CQ-Contest] Training Potential Contest Ops

At a local radio club (non-contest) meeting this evening, I was
approached by two people asking about contesting ... basically, wanting
to do some kind of contest operating as training and practice - instead
of just once a year at Field Day.

While they are probably not up to participating in a serious multi-op
operation (yet!) in one of the major contests, what are some other good
choices to get a small group of primarily non-contesters together, and
do a nice little low key contest training operation?  I'm thinking
perhaps some of the bigger State QSO Parties that allow multi-op and
maybe NAQP.  This, of course, would be a Phone operation from a probably
less than optimum contest station (wire antenna on top of a 6 story
building, and perhaps an amp). 

Any other thoughts?
