First, I believe you are confused on the Ellender in 1880.  You say you don't know if that is she in Mecklenburg Co., NC in 1880.  I would say it definitely is not, because you have her with William in Cherokee Co., NC in 1880 census.  That census age has her born about 1827.  Ages in census records are more often wrong than right, I have found over the years.

I was at the Archives for a while this morning and had time to check the 1870 microfilm for Cherokee Co., NC.  I scanned it line by line.  There are some pages of the film that are very dim, but I do not believe I missed a McClure on them.  I did not find William and Ellender in 1870 census of Cherokee Co., NC.  There is no 1870 index book for Georgia, but I bought the 1870 GA index on CD a few years ago.  I did not find them in Georgia either.  It appears they just got missed.

I then came home and checked all Williams, Bill and Willie McClures in NC and Georgia in 1900 census.  None of them was the right age, or any with wife, Ellender/Nellie.  Evidently, both were deceased before 1900.

Joseph McClure married Georgia Evans on 1 Apr 1894, Cherokee Co., NC, by G. J. Crow, J.P.

William Sherman McClure married Lillie O. Farmer on 18 Dec 1890, G. Y. Burgess, Magistrate.

Deaths of Cherokee Co., NC -  Georgia McClure died 18 Jul 1914, daughter of Margaret Moore & Jackson Evans.

Delayed Birth Records of Cherokee Co., NC -

Charles Benjamin McClure born 27 Dec 1892, son of Henry McClure and Carrie Brown

Cora McClure born 1 May 1889, dau of Henry P. McClure and Carrie C. Brown.

I found Henry in 1900 census and Joseph V. in 1900 and 1910 census.
