There is a fairly easy way to get an 80m dipole (or inverted vee) to
match on 30m. ( I use this same trick to get a 40m dipole to match
perfectly on 15.)  On each side, 1/3 of the way out  from the feedpoint,
you add a piece of wire that can be tied off vertically or at some
angle. In the case of 80/30m, make them about 10 ft long and trim for a
good match on 30.  The ends of the dipole will have to be shortened a
foot or so to get it back on freq for 80.  In the case of 40/15, I
solder on a 3-ft piece of brazing rod at its center and bend it down
like a hat. Works like a charm.
