I see no problem using a pair of them. In fact, it makes it easier if 
you want to run a full wave center tapped HV supply. I would still pull 
the grounded end off the ground lug and bring the junction of the two 
out as B- which you probably do not want right at ground potential but 
it should work fine. It also gives you the option to run the primaries 
in series on 240V if you wanted to. This takes us back to a previous 
transformer discussion ;)
