SO2R is really more an acquired skill then just cobbling together the hardware.
 
My guess is the best way to beat the SO2R guy in your neighborhood is to learn 
this skill as well.  Nothing about contesting is fair, and skill is about all 
we have 
left after location, and hardware. 

Adding a new category doesn't solve your score discrepancy, real or imagined,
but practice developing the two radio skill will boast your scores and fun. 

Learning SO2R may be hard for some. I assume the best ops learned it quickly
as their brain is probably already somewhat wired for multitasking. So another 
option I suggest is multi op, in my opinion the most fun of all. Two or more 
guys
in the neighborhood that work together to try and beat the guys down the street
to see who buys the donuts at the next contest club meeting makes winning
really fun. Getting some sleep is an added bonus.
