The Elecraft transverters I'm sure perform very well, they
also use a 17dBm mixer like the DEMI units do. And also like
the DEMI units they use a very low noise device for the RX RF
amplifier stage (<1 dB overall NF for the transverter). In
the end the performance I'm sure is closely comparable for
both. The key differences that I can think of are:

1. Polish - Elecraft is beautifully constructed inside and
out. The DEMI units are very utilitarian in appearance and
function.
2. IF radio interfacing - When used with a K2 the Elecraft
units interface seamlessly and can be daisy chained together
and all be controlled from the K2 itself. When used with
something other than a K2 then they are about the same to
interface with as most any other mid to high end transverter
is. The Elecraft does however provide jumpers for most of the
items you may need to reconfigure. The DEMI units you
generally need to move soldered connections from one place to
another.
3. Stability - The Elecraft transverters offer an option to
improve stability. The DEMI trasverters can also be fitted
with a thermister heater to hold the xtal at a set temp.
Impoves stability significantly. There have also been a
number of other design tweaks and changes to the DEMI units
over the last few years (most of which are retrofitable into
the early ones). Some of the tweaks were to improve IP3
performance and stability.  

One thing that I have never seen or heard any comments about
is the ability of the Elecraft transverters to handle heavy
TX usage. They just don't look like they have heat sink
enough for heavy duty usage. The DEMI's have more heat sink
surface area, and they do heat up when used heavy, - hence my
concern for the Elecraft in that specific area.

I any case I doubt if you can go too wrong by picking either
one of them.
