Not impossible -- just very, very difficult.  All you need to do is 
find a dual-gang reverse log pot of the correct value and form factor.
Or, you could panel-mount a single-gang 10k linear pot and build a 
little PC card with appropriate circuitry and a couple of LDRs.  (In 
the end, this may be less work.)
