I guess it might be that Ten-Tec has a large stock of the encoders it used which were likely the same for O, O-II, and Omni7. If so then they are as per original I assume. If not NOS it would be good to know where they are sourcing such apparently unobtainable items. Then again maybe they just had the manufacturer build them 10,000 off.

When I replace the encoders, I disassemble them and remove the spring that 
makes the detent operate in stepwise fashion.
If you do not do that, some adjustments will double step.

It takes about 5 minutes each to do this.

Yes you need to use the longer ones.

The part number (Digikey) is PEC11L-4225F-S0015-ND

Though not ideal the encoders can be disassembled if your vision and tool kit 
are up to it. This allows removal of the detent function followed by reassembly 
of the encoder. It can be done though there are failure opportunities along the 
way.

Secondly watch out for the shaft length. I forget exactly but I think only the 
versions with the longest shaft length (25mm?) can be used.

The lower resolution 15ppr is I think the same as the original and better than 
the higher resolution 20ppr with which you will need to crank the knob much 
more for the same effect.

Knob removal is by pulling off the silver collar and then undoing the hex set 
screw. Board removal requires undoing all 6 of the plastic collars.
