It is nice to have a large property for antennas plus perhaps less RFI but my guess is that the cows will win this battle. Even shallow burying may not work if the ground gets soft during rainstorms and stepped on by a 1500 pound cow. You did not describe your antenna or support or what band it's for, perhaps there are other options.
