Well, that was my question.  Are there any advantages or
disadvantages to using Grade 8 hardware?  Sure, it will
cost more, but you could be pretty confident they'd never
break on you.

This is why different bolt types are used in applications. Grade 2 bolts stretch and break easily. SS bolts stretch, but are hard to break. Grade 5 bolts hardly stretch but do break. Grade 8 bolts do break, but not easily (if at all).
