Simply, if you are receiving (listening) or transmitting, you are operating.
Many contests specifically include "listening" as operating time.
For example, the ARRL 10 Meter Contest: "2.2. Listening time counts as
operating time. "
Many contests also specify a minimum amount of time necessary to count as
off time.
For example, the ARRL November Sweepstakes: "2.4.1. Off periods may not be
less than 30 minutes in length. "
This precludes you from taking a few minutes off here and there - between
contacts for example - and adding them up to calculate your off time.
I don't believe keyboard activity will reveal when one is listening or not.
