WinKey can be used with single-lever paddles. I think it costs about $35
and is available from K1EL??? (I'm working off
memory -- do a google to verify this.)

Well half of your problem is fix-able.
There are still PLENTY of single lever paddles available.
As far as the electronics, that is a bit tougher!
If you really want to use a single paddle, do a search on ebay for
a Hallicrafters or Eico keyer.
They are old, but work great!
I find no problem switching back and forth from single paddle to squeeze
keying.
Heathkit is the reason. In the '70s, I bought an HD-10 keyer, single
lever....and a few years later I bought the HD1410, a squeeze type. I still
have 'em both....plus a few more. The HD-10 is an excellent single paddle
keyer all in one, but you will likely not be too font of its' snap switch
keyer mechanism.
I plug a vibropaddle (vibroplex) into the Hallicrafters TO keyer when I fire
up the old 2NT/2C combo.
Squeeze paddles are plugged into everything else, and a few bugs as well.
Let me know when you are shopping for a paddle, I will send you a few
